Weekend Superhero (Part II: Waffles!)

Ingredients:
2 eggs
2 cups flour 
1/2 cup melted coconut oil (or vegetable oil or canola oil)
4 teaspoons baking powder
1-2 Tablespoons vanilla (or none, if you don't dig vanilla)
1 3/4 cup milk

Directions:
Beat eggs until fluffy
Add all ingredients and mix (it's ok if it's a bit lumpy)
Pour 1/2 cup of mix onto waffle iron

Tips:
I usually mix 1/2 whole wheat flour and 1/2 white flour
This recipe can be used with a Belgium waffle iron or a regular waffle iron
Want to really be a superhero? Put a little sugar on frozen strawberries and microwave 'til hot. Mmmmmm!

Weekend Superhero (part I: pancakes!)

Ingredients:
2c flour
1 1/2 c milk*
2 eggs
4T butter
4 t baking powder
1T sugar (or not, if you're like that)
pinch of salt

Directions:
Melt butter
Quickly whisk together milk, eggs & melted butter
Add dry ingredients
*If it's too thick, add a little more milk.

Tips:
If you're using a cast iron griddle or skillet (as I do) let it pre-heat the entire time you're mixing the ingredients. 
Don't flip the pancakes until they begin to form bubbles on the top. Flipping too early makes for weird pancakes.

You can even make weird crazy kiwi haired people or write stuff with your pancake batter. Of course you already knew that, but maybe you didn't know that it doesn't matter how sucky you are at it. Your kids will think it's awesome!

Last Minute Brunch

Menu:
Breakfast Burritos
Yogurt & Granola
Fruit
Mimosas
Coffee

Ingredients for burritos
1 bag of small potatoes (cubed, really small so they'll cook fast. You might be in a hurry)
handful of sweet peppers (chopped or sliced or whatever you want)
onions (diced)
salt & pepper 
bacon
eggs
tomatoes
salsa
sour cream
green onions or chives
avocado
tortillas

Instructions
cook bacon in oven safe skillet
drain off most of grease
cook potatoes until about half way done
add peppers & onions and cook until potatoes are tender
salt & pepper to taste
put skillet in oven to keep warm

scramble eggs in a separate pan

To Serve
Place eggs in serving dish
Set out skillet on hot pad
Warm tortillas
Place out all garnishes with spoons

It's not fancy, but it'll do in a pinch!

    You Call These Recipes?!

    I do. Sort of. This is not a cooking blog. Or a recipe blog. It's about half assed home making, and that means that the recipes will be, well, a little half assed. But I think you'll get the idea. Also, not all of them are half assed. Some of them are real recipes with actual measurements that if you follow, should pretty much work out for you.
